Rosa Radicchio & Blood Orange Salad

Ingredients

Salad:

  • 1 head of radicchio rosa (pink radicchio)

  • 1 head of castel franco

  • 2 blood oranges or oranges

  • 1 fennel bulb

  • 1/2 red onion

Dressing:

  • 1/4 cup red wine vinegar

  • 3/4 cup olive oil

  • 2 tsps. honey

  • 2 tbsp. orange juice

Instructions

  1. Wash radicchio and tear leaves into a larger bowl

  2. Thinly slice onion and fennel and place in the bowl. Slice oranges and top salad.

  3. Mix olive oil, red wine vinegar and honey is a smaller bowl. Mix dressing with salad and toss.
