Rosa Radicchio & Blood Orange Salad
Ingredients
Salad:
1 head of radicchio rosa (pink radicchio)
1 head of castel franco
2 blood oranges or oranges
1 fennel bulb
1/2 red onion
Dressing:
1/4 cup red wine vinegar
3/4 cup olive oil
2 tsps. honey
2 tbsp. orange juice
Instructions
Wash radicchio and tear leaves into a larger bowl
Thinly slice onion and fennel and place in the bowl. Slice oranges and top salad.
Mix olive oil, red wine vinegar and honey is a smaller bowl. Mix dressing with salad and toss.
