Holiday Salad

Ingredients

  • 1 head of Radicchio

  • 1 head of Castel Franco

  • 1 fennel bulb

  • 2 oranges or blood oranges

  • 1/2 cup of pistachios

Dressing

  • 1/2 cup olive oil

  • 1/4 cup red wine vinegar

  • 4 tablespoon orange juice

  • 2 tablespoon honey

  • 1/4 teaspoon orange zest

Instructions

  1. Wash and tear radicchio and castel franco leaves in a large bowl

  2. slice fennel and oranges thinly and place on salad

  3. For salad dressing, mix olive oil, red wine vinegar, honey and orange juice.

  4. Add pistachios and dressing to the salad and toss. Enjoy!
