Fennel al Forno
Ingredients
3 heads fennel
1.5 cups chicken broth
5 oz gorgonzola cheese
1/3 cup finely pureed bread crumbs or panko
Directions
Cut fennel bulbs from stock. Cut fennel in half lengthwise
Lay fennel cut-side up in a frying pan and add chicken broth. Cover the fennel and bring to a boil over high heat; reduce heat and simmer until fennel is tender when pierced approximately 7-9 minutes.
Place fennel in baking dish and cover fennel with remaining broth and chopped fennel fronds.
In a separate bowl, mix the gorgonzola cheese and finely pureed bread crumbs until mixed. Sprinkle over the fennel
Preheat oven to 375 degrees. Bake for about 20 to 25 minutes or until the cheese is golden.
Serve and mangia.
