Radicchio & Tuscan Kale Caesar Salad

Ingredients

Caesar Dressing

- 1/2 cup mayonnaise

- 2 tsp dijon mustard

-2 tbsp worcestershire sauce

-1 garlic clove grated

-2 tbsp fresh lemon juice

-1 tsp lemon zest

-1 tsp tahini

-1/2 cup olive oil

-1/3 cup grated parmesan

Crispy Chickpeas

- 1 can 15oz chickpeas

-1/2 tsp paprika

-1/4 cup olive oil

Salad

- 1 head of Radicchio

-1 bunch of tuscan kale

-grated parmesan (measure with your heart)

Directions‍ ‍

1. Preheat your oven to 425 degrees. In a bowl, toss chickpeas, olive oil and paprika.

2. Place chickpeas in the oven and bake for 20-30 minutes until golden brown.

3. For the dressing, whisk mayonnaise, dijon mustard, worcestershire sauce, garlic, lemon juice, lemon zest, tahini, olive oil and parmesan.

4. Chop the radicchio & kale into one inch pieces and add to a large bowl.

5. Toss lettuce, dressing and chickpeas.

4. Top with parmesean cheese and serve!
