Fig & Cantaloupe Summer Salad
Ingredients

1 head of Radicchio/Castelfranco
2 cups of arugula
1 clamshell black mission figs
1 C. chopped cantaloupe
1/2 C. feta cheese
1/4 C. chopped pistachios
Fresh Herb Vinaigrette Dressing
1/2 C. olive oil
1/4 C. white wine vinegar
2 Tbsp. honey
2 Tbps. chopped basil
1 Tbps. chopped mint
1 Tbps. chopped thyme
2 Tbps. lemon juice
Ingredients
1. Slice mozzarella thinly and lay on a platter. Slice fresh figs and tomatoes and display on the platter.
2. For the dressing, mix olive oil, balsamic vinegar and honey.
3. Drizzle on the platter and serve.
