Fig & Cantaloupe Summer Salad

Ingredients

Salad 

  • 1 head of Radicchio/Castelfranco

  • 2 cups of arugula

  • 1 clamshell black mission figs

  • 1 C. chopped cantaloupe

  • 1/2 C. feta cheese

  • 1/4 C. chopped pistachios

Fresh Herb Vinaigrette Dressing

  • 1/2 C. olive oil

  • 1/4 C. white wine vinegar

  • 2 Tbsp. honey

  • 2 Tbps. chopped basil

  • 1 Tbps. chopped mint

  • 1 Tbps. chopped thyme

  • 2 Tbps. lemon juice

Ingredients

1. Slice mozzarella thinly and lay on a platter. Slice fresh figs and tomatoes and display on the platter.

2. For the dressing, mix olive oil, balsamic vinegar and honey.

3. Drizzle on the platter and serve.
