Pompeii Salad

Ingredients

  • 8 oz of chicken

  • 7 oz of salami

  • 1 head of Radicchio

  • 1 head of Castel Franco

  • 1 cup of hot and sweet pickled peppers

  • 6 oz of gorgonzola

  • 1 cup of chopped basil

Red Wine Vinaigrette:

  • 1/2 cup olive oil

  • 2 tablespoon red wine vinegar

  • 2 garlic cloves minced

  • 2 tsps. Dijon mustard

  • 2 tsp. oregano

Instructions

  1. Grill chicken with olive oil and seasonings.

  2. Chop Radicchio and Castelfranco and add to a large bowl. Chop salami, basil and peppers and add with chicken into the bowl.

  3. For the dressing: combine olive oil, chopped garlic, Dijon mustard, red wine vinegar and oregano into and small bowl and whisk.

  4. Add to salad with gorgonzola, toss and serve.
