Pink Radicchio Salad
Ingredients
2 heads of pink radicchio
1 fennel bulb
1 avocado
1 orange
1/4 cup olive oil
1/8 cup balsamic vinegar
Instructions
Wash and separate radicchio leaves into smaller pieces and lay on a platter. Peel orange and cut into slices. Wash and thinly slice fennel width wise. Peel and slice avocado. Arrange on a small platter
In a small bowl, mix olive oil, balsamic vinegar and pepper.
Toss salad with dressing and enjoy!
