Kale and Brussels Sprouts Salad
Ingredients:
Salad:
2 bunches of Tuscan Kale
1 lb of Brussels sprouts
1 cup of chopped pistachios
grated parmesan cheese
Dressing:
1/2 cup olive oil
1/4 tablespoon red wine vinegar
3 tablespoon lemon juice
2 tablespoon Dijon mustard
1 small shallot
Directions:
Message Tuscan Kale and chop into thin pieces and add to a medium bowl. Slice Brussels sprouts thinly and add to bowl.
Mix olive oil, red wine vinegar, lemon juice, Dijon mustard and chopped shallot in a small bowl and whisk together.
Add dressing and pistachios to salad and toss. Add grated parmesan cheese and serve.
