Kale and Brussels Sprouts Salad

Ingredients:

Salad:

  • 2 bunches of Tuscan Kale

  • 1 lb of Brussels sprouts

  • 1 cup of chopped pistachios

  • grated parmesan cheese

Dressing:

  • 1/2 cup olive oil

  • 1/4 tablespoon red wine vinegar

  • 3 tablespoon lemon juice

  • 2 tablespoon Dijon mustard

  • 1 small shallot

Directions:

  1. Message Tuscan Kale and chop into thin pieces and add to a medium bowl. Slice Brussels sprouts thinly and add to bowl.

  2. Mix olive oil, red wine vinegar, lemon juice, Dijon mustard and chopped shallot in a small bowl and whisk together.

  3. Add dressing and pistachios to salad and toss. Add grated parmesan cheese and serve.
