Fig Chip Ice Cream
Beat the heat with some fig ice cream!
Ingredients
1–2 lbs Joe’s Fresh Figs
1 cup sugar
1/8 Tsp. salt
1 1/2 cups heavy cream
1 cup whole milk
1 tbsp. fresh lemon
1/2 cup of mini sweet or dark chocolate chips
Instructions
Combine figs, sugar and salt in a heavy saucepan. Heat mixture over medium-high heat until sugar dissolves, while stirring occasionally. bring to boil, reduce heat, simmer for 10 minutes. Remove from heat and let cool. Puree mixture in a blender.
Combine fig mixture, heavy cream, milk, and lemon juice in a large bowl. Cover fig ice cream base with plastic wrap and refrigerate overnight.
Pour base into an ice cream maker & process ice cream according to manufacturer’s directions. Add chocolate chips the last 5 minutes & save some chips to garnish the top. Freeze & serve.
