Dubai Chocolate Fig

3 lb. Joe’s Premium Black Mission Figs
1 lb. dark chocolate
Pistachio Kadifi Filling
5 oz. toasted Kadaifi
5 oz. pistachio creme
3 tbsp. creamy tahini
Dubai Chocolate Ganache
1 lb. Dubai milk chocolate
9 oz. heavy creme
Pistachio Marscapone
4 oz. pistachio creme
8 oz. marscapone cheese
2 oz. goat cheese
Melba Sauce
1 lb. strawberries & raspberries
5 oz. sugar

4 oz. pistachios shelled
Ingredients
Topping, Sauces and Base
1. Melba Sauce: Marinate berries and sugar overnight. On the stovetop, simmer mixture until berries are cooked down. Blend and strain.
2. Pistachio marscapone: in a blender or food processor, blend pistachio creme, marscapone cheese and goat cheese until completely blended. (set aside)
3. Roast pistchios in the oven and chop into small pieces.

1. Pistachio kadifi filling: in a blender or food processor, blend toasted Kadaifi, pistachio creme and tahini until smooth.
2. On the stovetop, melt the dark chocolate.
3. On a stovetop, melt 1 lb. Dubai milk chocolate. Add creme and bring to a simmer whisking
until smooth.
4. Slice the figs in half and take 1 1/2 tsp. of the pistachio kadifi filling and press into the fig.
5. Next, dip the filled fig into the melted dark chocolate. Let set in the refrigerator. Once cooled, drizzle
with Dubai chocolate ganache.
Serving
1. Pipe a small mound of pistachio marscarpone onto plate.
2. Drizzle with melba sauce.
3. Plate dipped fig on top and sprinkle with pistachios.
