Radicchio & Fig Panzanella
Ingredients
Salad
1 head of Radicchio
1 clamshell black mission figs
1/2 C. basil
1/2 C. chopped mint
Bread Crumbs
1 loaf of ciabatta bread
fresh rosemary
fresh thyme
1/4 C. olive oil
Dressing
1/2 C. olive oil
1/4 C. balsamic vinegar
1 shallot
1 Tbsp. honey
Ingredients
1. Heat the oven to 350. Cut bread into large cubes and chop thyme and rosemary. In a bowl mix bread, herbs and oilve oil. Bake for 10-15 minutes.
2. Tear Radicchio leaves and add to a bowl. Chop figs into fourths and also add to the bowl.
3. Tear basil and mint and add bread crumbs to the salad bowl.
4. Mix oilive oil, balsamic vinegar, choppped shallots and honey.
5. Dress the salad and toss.
