Fig Cookie

Ingredients

  • 2 and 1/4 cups all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon

  • 3/4 cup unsalted butter, soften to room temperature

  • 3/4 cups of granulated sugar

  • 1 large egg

  • 2 teaspoon of vanilla extract

  • 1/2 teaspoon to almond extract

Instructions

  1. Mix flour, baking powder and salt together in a medium bowl and set aside.

  2. In a large bowl, using an electric mixer, beat the butter and sugar until smooth and creamy. Add the egg. vanilla and almond extract to the mixture and mix for 1 minute

  3. Add the dry ingredients to the wet ingredients and mix until combined

  4. Chill the dough for 2 hours

  5. Once the dough has chilled, roll it out and use a cookie cutter to cut the dough into shapes

  6. Slice the figs and place them on the cookies

  7. Bake the cookies for 10 minutes at 350F
