Crunchy Thai Salad w/ Radicchio
Ingredients:
-1 head of Radicchio
-1 c. shaved carrots
-1/3 chopped
-1/2 c. chopped bell peppers
-1/4 c. toasted sesame seeds
1/2 cup toasted cashews
Dressing:
-1/4 c. peanut butter
-3 tbsp rice vinegar
-1 tbsp. Coconut aminos
-1 tsp. sesame oil
-1 tbps. olive oil
—tbsp. toasted sesame seeds
-1 tbsp. honey
-1 garlic clove chopped
-fresh ginger chopped
Directions:
1) Toast Cashews and sesame seeds at 350 degrees until golden.
2) Chop Radicchio and bell peppers and grate carrots. Add to a large salad bowl.
3) For the dressing, mix peanut butter, rice vinegar, coconut aminos, sesame oil, olive oil, sesame seeds, honey garlic and ginger.
4) Add toasted cashews and sesame seeds and the dressing to the salad and toss. Top with more cashews and sesame seeds and serve.
