Pompeii Salad
Ingredients
8 oz of chicken
7 oz of salami
1 head of Radicchio
1 head of Castel Franco
1 cup of hot and sweet pickled peppers
6 oz of gorgonzola
1 cup of chopped basil
Red Wine Vinaigrette:
1/2 cup olive oil
2 tablespoon red wine vinegar
2 garlic cloves minced
2 tsps. Dijon mustard
2 tsp. oregano
Instructions
Grill chicken with olive oil and seasonings.
Chop Radicchio and Castelfranco and add to a large bowl. Chop salami, basil and peppers and add with chicken into the bowl.
For the dressing: combine olive oil, chopped garlic, Dijon mustard, red wine vinegar and oregano into and small bowl and whisk.
Add to salad with gorgonzola, toss and serve.
