Pink Radicchio Salad

Ingredients

  • 2 heads of pink radicchio

  • 1 fennel bulb

  • 1 avocado

  • 1 orange

  • 1/4 cup olive oil

  • 1/8 cup balsamic vinegar

Instructions

  1. Wash and separate radicchio leaves into smaller pieces and lay on a platter. Peel orange and cut into slices. Wash and thinly slice fennel width wise. Peel and slice avocado. Arrange on a small platter

  2. In a small bowl, mix olive oil, balsamic vinegar and pepper.

  3. Toss salad with dressing and enjoy!
