Radicchio/Fig and Watermelon Salad

Ingredients

  • 2 heads of Radicchio

  • 12 figs (6 black mission and 6 kadota figs)

  • 2 cups of cubed watermelon

  • 1 bunch of basil

  • 1/4 cup of feta

  • 3 tablespoon olive oil

  • 1 tablespoon of honey

  • 1 tablespoon lemon juice

  • balsamic reduction

Instructions

  1. Tear radicchio leaves and assemble on a plate

  2. Cut figs into halves and watermelon into cubes

  3. Place figs watermelon, basil and feta  on the plate

  4. Mix olive oil, lemon juice and honey 

  5. Dress the salad olive oil mixture and toss the salad

  6. Top with balsamic reduction and serve!
