Fig & Radicchio Salad
Ingredients
Salad
1 basket of figs
1 head of Radicchio
2 cups of Arugula
6 oz of fresh mozzarella
Dressing
2 tbsp. olive oil
2 tbsp. balsamic vinegar
1 tbsp. Dijon mustard
2 tsp honey
1 tbsp. chopped fresh basil
1 tsp. chopped fresh thyme
Directions
Wash Radicchio and tear the leaves into small pieces into a bowl
Add arugula to the bowl and wash the figs and cut into slices of four. Tear the pieces of fresh monzarella and add to the bowl.
In a different smaller bowl, mix olive oil, balsamic vinegar, mustard, honey and fresh chopped basil and thyme.
Add dressing to salad, toss and serve. Enjoy!
