Tuscan Kale & Radicchio Frittata
Ingredients
8 eggs
1 cup of chopped radicchio
1 cup of chopped kale
1 cup whole milk
1/2 cup of grated pecorino cheese
Directions
In a cast iron skillet, sauté kale and radicchio with 1 tablespoon of olive oil until wilted, approximately 3-4 minutes.
In a separate bowl, mix eggs, milk and cheese.
Add egg mixture into the skillet. Cook on medium heat for 5 minutes until firm around the edges.
Preheat oven to 325 and cook for 12 minutes until firm when shaken
Sprinkle grated cheese on top and serve!
